You're wondering how to set up your portal so you offer exchanges for variants? Wander no more (get it?)!
Let's visit the Configuration -> Exchanges section. Once there, we will be able to see the Variant Exchanges tab. That's where we'll be staying.
βNow, let's go ahead and analyze the possibilities and options you have for Variant Exchanges:
Enable Variant Exchanges with locations -> This option enables you to display variants from a specific Shopify location. Only the variants from the chosen location will appear for selection during the returns process.
Enable Variant Exchanges with same variant -> When Enabled, your customers will be able to exchange again for the same variant. Disable if you don't want this scenario to happen.
Enable Same-Price exchanges only -> When Enabled, your customers will only be able to select variants of the same price. When Disabled, customers will be able to choose different-priced items too.
Force overselling -> Only enable if you want variants to always show as available for exchange, even if they're out of stock.
Before we test, there's one small step: we need to activate this option. For us and for our customers. Let's do it! Go to Configuration -> Returns -> Return Options. Activate the Exchange Product option.

βLet's witness the fruit of our labor:

As we can see, our customer here was able to exchange his Medium-sized Jacket to a Small one - it was too big!
That's it. Your customers are all set to exchange and for you to keep being their go-to store!
